Home Made Corn Bread

heat oven to 425 --- serves about 9
  • 1 Cup flour {A.P.}
  • 1 cup yellow cornmeal
  • 2 Tablespoons sugar
  • 1 teaspoon salt
  • 3 teaspoons {= 1T.}baking powder
  • 1 egg, beaten
  • 1 cup milk
  • 2 Tablespoons bacon drippings or other fat

Sift dry ingredients into large bowl. In small bowl beat egg, milk and fat, add to dry ingredients and mix only to blend and moisten {DO NOT BEAT or you will ruin the cornbread} Let rest 15min.

Grease a 9x9 inch pan, {I like to use my small cast iron skillet} heat pan in hot oven @425*

Pour batter into HOT pan and bake 20-30min.

TIP; I like to sprinkle top with sugar before baking and brush the top with a honey butter after baking. Try folding 1 cup fresh berries into batter for a treat.
